Ingredients

For the Roasted Cauliflower:

  • 1 ripe avocado

  • 2 tbsp water (to adjust consistency)

For Assembly:

  • 8 small corn or flour tortillas
  • ½ cup shredded purple cabbage
  • ¼ cup chopped cilantro
  • ¼ cup diced red onion
  • 1 jalapeño, sliced (optional)
  • Lime wedges for serving

Instructions

  1. Roast the Cauliflower:
    • Preheat the oven to 400°F (200°C).
    • Toss the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and black pepper.
    • Spread evenly on a baking sheet and roast for 25 minutes, flipping halfway through.
