Ingredients
For the Roasted Cauliflower:
- 1 medium head of cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp garlic powder
- ½ tsp chili powder
- ½ tsp salt
- ¼ tsp black pepper
- Juice of ½ lime
For the Avocado Crema:
- 1 ripe avocado
- ½ cup Greek yogurt (or coconut yogurt for vegan option)
- Juice of 1 lime
- 1 clove garlic, minced
- ¼ tsp salt
- 2 tbsp water (to adjust consistency)
For Assembly:
- 8 small corn or flour tortillas
- ½ cup shredded purple cabbage
- ¼ cup chopped cilantro
- ¼ cup diced red onion
- 1 jalapeño, sliced (optional)
- Lime wedges for serving
Instructions
- Roast the Cauliflower:
- Preheat the oven to 400°F (200°C).
- Toss the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and black pepper.
- Spread evenly on a baking sheet and roast for 25 minutes, flipping halfway through.
- Squeeze lime juice over the roasted cauliflower before serving.
- Prepare the Avocado Crema:
- Blend avocado, Greek yogurt, lime juice, minced garlic, and salt in a food processor.
- Add water gradually until you get a smooth, creamy consistency.
- Assemble the Tacos:
- Warm the tortillas on a dry skillet for about 30 seconds per side.
- Spread a layer of avocado crema on each tortilla.
- Add roasted cauliflower, shredded cabbage, red onion, and cilantro.
- Top with jalapeño slices if you like extra spice.
- Serve & Enjoy!
