Mediterranean Chickpea Salad with Avocado Dressing
Ingredients –
For the Salad:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ¼ cup red bell pepper, chopped
- ¼ cup red onion, finely chopped
- ¼ cup black olives, sliced
- ¼ cup feta cheese (optional for vegans)
- 2 tbsp fresh parsley, chopped
For the Avocado Dressing:
- 1 ripe avocado
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp black pepper
- 2 tbsp water (to adjust consistency)
Instructions
- Prepare the Dressing:
- In a blender, combine avocado, olive oil, lemon juice, garlic, salt, and pepper.
- Blend until smooth, adding water gradually to reach the desired consistency.
- Assemble the Salad:
- In a large bowl, combine chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, olives, feta (if using), and parsley.
- Mix Everything:
- Pour the avocado dressing over the salad and toss gently until well-coated.
- Serve:
- Let it sit for 10 minutes to allow flavors to meld.
- Serve fresh or refrigerate for up to 24 hours.
